- 1 med. cucumber, peeled and thinly sliced
- 1 small white or red onion, thinly sliced
- 1 med. tomato, chopped
- 1/2 C. white distilled vinegar
- 1/4 C. sugar
- 3/4 C. water
- pinch of salt
- 1/4 tsp. dill weed, optional
- Put the cucumber, onion and tomatoes in a bowl. Whisk together the remaining ingredients and pour in the bowl. Give a good toss, cover and place in the fridge for 3 to 4 hours before serving.
